One can also expect grilled seafood and vegetables, or salads and pastas, to be seasoned with ishiri, a traditional fish sauce concocted here out of squid fermented for over two years.
Apart from its cuisine, Flatts offers lovely accommodation for full bellies to retire to. Its five tatami-laid guest rooms boast calming views of the garden or of the sea; while earthy materials and warm colours create a comfortable and homely atmosphere.
In line with this culinary adventure, a table is set for you at L’Atelier Noto, a sophisticated but understated restaurant where the head chef, trained at L’Atelier de Jöel Robuchon, whips up simple dishes with the freshest seafood from Noto.
As we explore more of the coastline, the journey brings us to a sake brewery to sample some of their finest and learn the art of this timeless beverage. Wine-lovers will delight in a visit to a vineyard in Anamizu-machi.
